Kale and Navy Bean Soup


For a wonderful (and very easy) recipe for this soup, go here!  I used some of my chicken broth that I made after roasting my chicken on Sunday. I soaked the beans in just water (for two days!) and made it this afternoon before I took Caroline to her outdoor riding lesson. I knew we'd be cold when we came back so this was waiting to be reheated. I made a couple chicken breasts on the side, twice baked potatoes (leftover from Monday nights meal... just pop in the oven while doing everything else at 350 degrees F until tinged with brown.) And served up some chunky bread for the soup. My soup had larger pieces of Kale in it and I just chopped the carrots into slices (that's how I like it). Caroline said it was really good... so there's a picky teenager's review for you!

She's busy preparing her Scholastic Writing Contest submission. I'm so excited! I've been hoping she would have a teacher who would participate in it. I always submitted work as a student to the Scholastic Arts Contest. I love to see the exhibits. I know it's pretty subjective judging but it's great that Caroline will be able to have her work read by others. Speaking of writing... I need to finish my Christmas letter!
